Japanese Wagyu beef is graded by the Japanese Meat Grading Association (JMGA). The top grade is **A5**. Wagyu beef is based on two things:

 

  • **Yield Grade (A):** Shows a lot of meat compared to the whole carcass.
  • **Quality Grade (5):** This is the highest score for four things: Beef Marbling Score, color, firmness, and fat quality.
